went out to liquid assets and hooked. both good restaurants. hooked seems to have the entire elemental science of flavor and diversity down for their food items, but it would be wiser for them to just go down to places like sunset marina and get nice fresh fish (being how that is the restaurant’s vibe. on the other hand, it seems like liquid assets, per usual, has their modern american fine-wine-dining atmosphere. they are probably the best bistro in ocean city, that being aside the fact there are no other real modern ones on the island. the food at liquid assets seems to have less cultural fusion than many other modern bistros elsewhere have seem to have adopted. this results in the food’s full flavor relying on all of the other elements on the plate. when a more fusion-type approach is employed in the cooking of the food, each element usually has it’s own distinct and full flavor, therefore the foods aren’t relying on each other for one piece to taste good, but instead are relying on each other to create diversity in both the flavor and textural elements of the dish.
